Eating from the Pantry Challenge...Update

Some are probably wondering how we made it through our week of eating from the pantry. I think we did quite well. Here's the details:

Tuesday: We ate at TGI Fridays with our coupons for a free burger. We ended up spending around $11. Not bad at all, considering that's how much it cost for a family to eat at a fast food restaurant these days.

Wednesday: I cooked a new Honey Chicken Stir Fry recipe which was delicious, and quite a hit with all in the family including the little guys.

Thursday:By Thursday, I was getting a little weak and thought about just grabbing something for lunch. But instead made turkey sandwiches with fruit. For dinner we ate our Cheesy Shepherd Pie and once again it was a family pleaser. By this evening, we were in the need for some more milk(with all the cereal eating=) and eggs so I did have to run to Kroger. I was tempted to pick up a few more items but I refrained myself. I was able to score a gallon of organic milk for $2.99. The grand total for that grocery stop was $4.34.

Friday: I thought again about getting carry-out for dinner since we had a busy morning and afternoon. But I stuck with the meal plan and made my turkey roll-ups and put some chicken nuggets in the oven for the boys. So everyone was happy once again.

Saturday: I was definitely tired of cereal by today! So I was on the look out for a new recipe to use some of my oatmeal from the stockpile. I remembered Money Saving Mom posted a recipe, back in the summer, for a baked oatmeal. So I looked it up and decided to give it a try. For any interested here it is:
Baked Oatmeal

1 cup oil (can substitute butter or applesauce)
1 ½ cups sugar (can reduce)
4 eggs
6 cups oats
4 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
2 cups milk

Combine all ingredients in order listed. Pour into greased 9x13-inch pan. Bake at 375° for 30-40 minutes until lightly browned. Can refrigerate overnight before baking. Serve topped with butter, brown sugar, and milk.

I'm not a huge oatmeal fan but the hubby loves it. So I liked it okay but everyone else really seemed to enjoy it. I served it with butter, syrup, milk and toast. For dinner tonight, I had grilled pork tenderloin on the meal plan . But decided due to a chilly day to cook it in the crock pot with carrots.

So as you can see, we made it through the week. We only spent $19.30 on groceries and $11 eating out which was under our normal grocery budget for the week!! We also ate quite a bit out of our stockpile which is a good thing. If you don't eat up some of it from time to time, it will have to be thrown away and that's just wasteful.

I've actually enjoyed the challenge this week. Even though at times I was weak and wanted to grab something to eat. That is why a meal plan is always a good thing. Once you write it down it's more concrete then just cooking from day to day. It's been fun to try some new recipes and have them turn out successful, too!

Now for next week... planning a birthday party on a budget. :)

CVSing: Making the Most of Shopping @ CVS

I promised way back in May that I would post the advantages of shopping at different stores. Well, then the summer happened. Vacations, holidays, birthdays, and etc filled our summer. I also taught a class on "couponing" which was time consuming. Anyway with out further ado...here is a breakdown of making the most at shopping at CVS:

**To start at CVS you need an ExtraCare Card. This is a loyalty card with them. This allows you to get the items on sale and earn ECBs.

**ECBs are Extra Care Bucks. These are CVS money that can be used in the store for purchasing items. Exclusions are: prescriptions, alcohol, tobacco, lottery tickets, gift cards, stamps, money orders, prepaid debit cards, and phone cards.

**CVS runs certain items each week that when purchased you earn ECBs. These are in the weekly store ads.

**ECBs are printed on the bottom of the sales receipt when items are purchased and can be used for a future purchase. They usually have an expiration date of 1 month from the day printed.

**Here is what I recommend for getting started:

-Go through the weekly sales ad and see what ECBs are offered for that week.
-Choose items that you have coupons for and that have the highest ECBs coming back to you. You may stack manufacturer coupons with CVS coupons and ECBs.
-The goal is to spend the least amount of money out of pocket (OOP) and make back ECBs on what you did spend OOP. Or even a profit on the transaction.
-At least at the beginning write out your shopping scenario before going to the store. Write down each item being bought and match up the coupons with it. (It can be quite overwhelming at the start.)
-You can also work up more than one transaction to spend the least amount of $ OOP. This is called rolling your ECBs.
-Use the ECBs earned from the transaction before to purchase the items in the next Trans.
-You use those ECBs to earn new ECBs.
Now when going to CVS for shopping here’s how to approach the shopping trip.
-Collect all the items that you have planned to purchase in your written scenarios. Many times the items that have ECBs may be out of stock. So take your coupons in case you need to substitute an item. Remember you can get rain checks for items on sale or with ECBs.
-Have the items rang out in separate transactions if needs be. For example if you have $20 of merchandise and have 2-$2/$10 CVS coupons splitting the transaction will allow you to save $4 extra dollars.
-Also with ringing the transactions separately this will allow you to use the ECBs from the previous transaction.
-Give your coupons to the cashier in a certain order. 1.) CVS coupons like $2/$10 or $3/$15, etc
2.) CVS coupons for items (in store cps)
3.) Manufactor‘s coupons
4.) ECBs
-Also remember they will not give back change on ECBs. So sometimes you have to throw in fillers to use your ECBs on a transaction.

-Check that you have received your ECBs earned from your transaction. They print at the bottom of your receipt.

Eating from the Pantry Challenge...

This week/month is a very expensive one for our family. My oldest son turns 5 and we want to have a birthday celebration and invite our family and his friends to celebrate God's blessings. We usually have more medical expenses this month with doctor visits for both of the boys. So this week in particular, we are budgeting big time! I've given myself the challenge to do very little grocery shopping and eat from the pantry this week. I thought it would be fun to put the challenge out there and see if I can actually make it through the week...

So far I've spent under $15 at the grocery store this week. Which is awesome, considering $5.29 of that was spent for a gallon of organic milk. (That is the only item that I won't sacrifice...we love our organic milk-well I don't like milk but my little guys love it!)

Here's what else I ended up with:
3 lbs of Laura's Lean Beef marked down to $3.87-this was a huge blessing & I wished I would have picked up more.
1 gallon of milk $5.29
Bag of Mozzarella Cheese $1.67
Kroger Tortilla Chips $1.
Bananas .57
Sara Lee Turkey $3.98 -$3.00 coupon=.98
Brown Gravy Packets .76
Success Rice $1.82-$1.00 coupon here=.82
Total:$14.96

Dinner Meal Plan for the week:

Monday: Spaghetti w/the Laura's Lean Beef and Sauce and noodles from my stockpile

Tuesday:Getting our free burgers from the TGIF promo on Facebook. Sorry the promo's over though :(

Wednesday:Chicken Stir-fry Rice w/ chicken & Steamer veggies in the freezer and the Success Rice

Thursday:Cheesy Shepherd's Pie (I use this recipe but I make my own potatoes) w/Laura's Lean Beef, Steamer veggies from freezer, potatoes on hand & brown gravy

Friday: Cresent Roll Ups w/Sara Lee Turkey,Cresent's from my stockpile and cooked veggies from freezer

Saturday: Grilled Pork Tenderloin and Grilled Veggie Packet w/pork and veggies from the freezer.

For breakfast we will eat from our stockpile of cereal, oatmeal, eggs and toast.

For lunch we will eat leftovers, sandwiches from the Sara Lee turkey, grilled cheese, and bread from the freezer.

We have fruit, crackers, cheese, peanut butter, and plenty of granola bars for snacks this week, too.

We will see how it goes...and I'll let you know if we are successful at the week's end. :)
