Update On This Week's "Eating From the Pantry Challenge"

My Stuffed Pepper's Dinner this week.
                                        
Well, we successfully made it through the week with no grocery shopping. I didn't even end up paying out of pocket for milk. I decided to pick some up at CVS with a gift card from a prescription transfer. So our grocery totals for the month ended up being just under $76. Yay! It's really hard for me to believe that we were able to spend so little. And although my stockpile is smaller, it's not depleted.

This month has allowed me to be a little more creative with my cooking. And instead of running out to pick up something that needed to go with our dinner, I would see what I could whip up or make from scratch. It's been fun and a challenge.

The good thing that has come from this is my hubby and I have determined we can probably shave at least $10 off our weekly grocery budget. That's a $40 savings a month...we'll see.

So far I've spent only $22 on next week's groceries. Since I cooked my turkey today, we should have enough meat for a least 3 more meals. We may be able to make it through another week of very little grocery shopping.

Waffle Recipe

I mentioned in my "Pantry Challenge" that I recently was able to try out my friends new waffle machine. I absolutely loved it! The recipe we used was quite simple and pretty frugal...so I thought I would share. (Thanks, Kim and your mom-in-law for the recipe!)

Quick Waffles

3 eggs

1 cup milk

1/2 cup melted butter

1 Tbsp. vanilla

2 cups of flour (we used 1 & 1/2 cups of self rising flour and 1/2 cup of whole wheat flour**so we omitted the salt and baking powder)

**1 tsp. salt

**1/2 Tbsp. baking powder

2 tsp. sugar

Beat whole eggs in a bowl until thick. Beat milk, melted butter and vanilla into egg. Combine remaining ingredients. Mix well. Makes 6 -8 waffles.


We did this recipe times 4. We added freezer jam in part of the batter, and chocolate chips in another set of batter for variety. Yum!

If you're in the market for a new waffle recipe, give this one a try. We divided and froze the waffles, and reheat them in the toaster before serving.

Eating from the Pantry Challenge Update

Well, we made it successfully through last week without too much turmoil. At the start of the week, I wasn't sure that my littlest guy was on board with us. One afternoon I asked him what he wanted for lunch and gave him the choices I had listed. He answered, "No I don't want that...I want a hamberger." After a little convincing, he accepted something on the meal plan. :)

Here are the grocery totals for last week:
$8 at Meijer--- that I mentioned previously
$3 for milk and yogurts
Grand total of $11 for last week.

Then, I stopped at Walmart Saturday night and picked up more yogurts, fruit, veggies and cheese for this week.
Total of $10 for this week
But, I still have to pick up milk for this week(probably around $3).

Shortcuts.com: 28 New Coupons


I just loaded 28 new coupons on my Kroger Plus card at Shortcuts.com. Check out their website because they have tons of new coupons available.

If you're not familiar with Shortcuts.com, it's a website that has coupons which can be downloaded to loyalty cards of certain stores like Kroger. Go here for the list of stores.

Go here and register/sign in at the Seventh Generation website, and then have access to the $2/2 Seventh Generation products coupon.

WAGS: Making the Most of Shopping at Walgreens


Walgreens (WAGS)

Here is the post I promised at the end of the year. We have a brand new Walgreens in our town, so I will be giving the weekly highlights, too.

Walgreens program is a lot like the CVS program except their program has Register Rewards (RR). There are also some other notable differences:

---WAGS DOES NOT have a loyalty card which must be used with each purchase.
---You may have to buy multiples to get the RR but you cannot buy 2 of same item and receive 2 RR on the same item in the same transaction.
---You cannot “roll” RR from one transaction to other on the same items.

But you can use RR to purchase another item that produces RR.
---RR are treated as manufacturer coupons when checking out.

The issue with that is you must purchase as many items as you have coupons(WAGS Policy). Sometimes this makes it somewhat difficult to stack RR with manufacturer’s coupons. This is where you can use fillers (gum, candy bar, clearance item) to maximize the transaction. (Fillers are items you purchase with a transaction that allow you to not have a negative balance on a purchase.)
---WAGS also has coupons in their weekly sales ad and a monthly savings coupon booklet that can be used on specified items. For the most part, these are counted as a sale item. These can be stacked with manufacturers coupons and can create a lot of freebies.
---The order I’ve found that works best for giving coupons when ringing out is:
1.) RR
2.) Manufacturers coupons
3.) In ad coupons/Wags monthly savings ad coupons

***I interchange #1 and #2, but I usually always give #3 last.

There's a nice $2/1 high-valued coupon for 8th Continent Soy Milk. This soy milk is priced around $2.50 at Walmart and other stores. So it looks like some inexpensive soy milk, for those that drink it!

I'm In: Eating from the Pantry Challenge


Crystal from Money Saving Mom and Jessica from Life As Mom put a challenge out at the begin of January to join them in their, "Eating from the Pantry" month. Considering I had not been out to truly grocery shop since before the holidays, I knew that I could not participate all month. But after spending $60 at the beginning of this month plus $8 at Meijer this past weekend, I think I can make it for the rest of the month with what I have in the freezer and my pantry.

I wasn't sure if I wanted to publish that I was participating considering it makes everything very concrete. But after being called a chicken by one of my closest friends, I knew that I had to put the challenge out there. :)

So here is what I'm challenging myself with:

---Buy only fresh fruits, veggies and dairy products this month---I'll let you know what I spend
---Cook from what I have in the freezer or pantry
---Try a new recipe(s) in the process
---Save on our overall grocery bill for the month

(Now, I will be picking up freebies or almost freebies from the grocery store.)

Here's the meal plan for this week:

***Monday
Breakfast: Cereal
Lunch: Salad w/ Chicken Nuggets, wheat crackers
Dinner:Two free Raising Cane's Meals---total $0.00
---It was so delicious and I even have leftovers.

***Tuesday
Breakfast: Waffles
Lunch: Leftovers
Dinner: Chicken and Rice in the crock pot (double batch to eat Wed, too), veggies, rolls

***Wednesday
Breakfast:Eggs and Toast
Lunch: Grilled Cheese, carrot sticks
Dinner: Leftover Chicken and Rice,baked potato, veggies

***Thursday
Breakfast: Cereal
Lunch:Quesadillas, apple slices
Dinner: Roast, Mashed Potatoes, cooked carrots, bread

***Friday
Breakfast: Waffles
Lunch: Chicken Nuggets with some veggies
Dinner: BBQ sandwiches with leftover meat from roast, hash brown casserole (no onions), pan-seared green beans

***Saturday
Breakfast:Church Breakfast---No cost
Lunch: Snacks---we're usually really stuffed after our annual church breakfast :)
Dinner: Pizza Night---No cost to us again...thanks to a very generous person who provided the funds for it. :)) What a blessing!

Snacks:
Apples, Oranges, Carrots, Cheese, Crackers, PB & J, Popcorn, Jello, Pudding

Dessert: Warm Delights, Hostess Cakes, I'll probably make some brownies this weekend.

I may switch any of these around if it fits better for us.

You may notice we are eating alot of cereal and waffles for breakfast. Well, there is good reason for it. I literally have about 15 boxes of cereal in my stockpile that needs to be eaten. About the waffles...this afternoon my friend and I had a waffle making party with her new waffle maker. We made about 16 huge waffles and split them up. I'm putting them in the freezer and reheating them in the toaster as needed. :)

I think this challenge will be great for us. I have a huge stock pile of things in our pantry, but if we waste it, what is the good in that? It's absolutely wonderful to get freebies and stock up on items, but it's even better to put them to good use and eat them.
