Wondering what to make with that cheap Campbell's soup you scored at CVS this week? I tried a new recipe tonight.
Chicken & Broccoli Alfredo
1/2 of 12 oz pkg of pasta, cooked & drained
1 cup of fresh or frozen broccoli
2 tbsp. butter
1 lb of boneless, skinless chicken breast, cut up
1 can of cream of mushroom soup
1/2 cup of milk
1/2 cup of grated Parmesan cheese
ground black pepper & garlic, to your taste
Cook pasta as directed on package. Add broccoli the last 5 minutes of cooking.
Drain and return to pan.
Melt butter in pan. Add cut up chicken and cook for 5 minutes or until cooked well.
Stir in soup, milk, Parmesan, pepper and pasta. Cover and cook 5 minutes or until heated through.
It was a big hit at our table tonight. Hubby, two picky eaters and I loved it. Anytime I can sneak broccoli in the boys food is a good thing. Not to mention it was very affordable. For more great recipes to use up those cream soups check out http://www.campbellskitchen.com/.
